Braised Pork and Potatoes

Buy the meat, wash it, boil it in boiling water to remove the froth, then cut it into pieces. I can’t eat it too fat, so I bought it on the lean side. Boil a pot of boiling water for use before frying the meat.

Put a little oil in the pan, heat the pan with cold oil and fry the meat slightly yellow, fill the meat with a bowl, leave a little oil in the pan and fry rock sugar over low heat, fry out the sugar color (the color turns yellow and foam), put the meat in Stir-fry in a small fire together.

Put the cinnamon, star anise, ginger, garlic, pepper, dried chili, bay leaves, green onion into the pot and stir fry with the meat for 20 seconds, then pour in the pre-boiled water, cover the pot and simmer for 80 minutes. When the water is low, continue to add boiling water to cook, and add salt to continue cooking after 60 minutes.

In the process of cooking meat, you can peel the potatoes and cut them into hobs, or cut into cubes. After cutting, wash twice with water and soak in water. When the meat is about to cook for 80 minutes, add the potatoes and cook for 15 minutes. The gas fires vary in size. The low fire may take 20 minutes to cook. Depending on the situation, cook until the potatoes are cooked.
Tips:
I prefer to eat well-cooked potatoes, so the cooked ones are worse. If you like to eat just-cooked potatoes, you should cook for less time.
