Braised Pork Elbow

It is best to soak the elbows in clean water for one to two hours. One is to soak the blood out; the other is to make the elbow fully absorb water, the skin will be more moisturized, and the taste will be better. Then use a boiling pot, add green onion ginger and cooking wine and cook for half an hour.

Sit in a pot, pour a little cooking oil, add rock sugar, and boil the syrup on low heat. When the rock sugar changes color, add a small bubble into the boiled elbow, and keep turning it to make it evenly colored.

Put a straw on the bottom of the casserole to prevent adhesion. Add all the seasonings to the pot before adding boiling water. Bring to a boil, turn to low heat and simmer.
