The pork belly can be skinned and cut into 1 cm 1 cm cubes. There are fat and lean pieces. Put sugar, mirin, and soy sauce to marinate for a night, so that the meat will be fully marinated and tasteful.

I didn't buy small onion heads, so I used purple onions for a stronger flavor.

There is a little oil in the pan, and the other oil can be used for cooking, which saves waste, but don't keep the fried meat. It is too greasy, because it is pork belly, so you don't need to cook too much.

Stir-fry on medium heat until the color changes, put sugar, soy sauce, and some mirin. Please pay attention here. The sugar, soy sauce, and mirin are all put twice, with the same amount.

A spoonful of sugar like this, soy sauce is based on the saltiness and color of the soy sauce you put in. If you put a little bit of soy sauce, it can be colored. Then you need to put some salt in it. The seafood soy sauce I use does not put salt in it. Put the soy sauce to taste.

After putting in the sugar mirin soy sauce, fry it, let the alcohol circulate, put the chopped onion in the pot and add boiling water, and start a long stew. In fact, it is best to stew in a casserole. My casserole has already been used up by me. Just use a large spoon to simmer directly, at least simmer for an hour and a half on low heat. After the eggs are cooked, they can be simmered together in the pot.
