Braised Pork on Rice

Dice pork belly.

Finely chop onion.

Soak dried shiitake mushrooms in warm water.

Also dice.

Flatten garlic, slice ginger, cut green onion, and prepare spices.

Boil in a frying pan, fry the onions on low heat until golden brown, drain the oil and set aside.

Fry the pork belly with base oil until the color changes.

The fried fragrant onion is the soul of braised pork rice, which is crispy onion, so it needs a low fire throughout the whole process of frying, turning it from time to time, the braised pork made from fried onion will be bitter.
