Braised Pork on Rice

Choose the fat and lean pork belly according to personal preference, soak it in cold water for half an hour to remove the blood, and then cut it into cubes of about 1cm. Soak the shiitake mushrooms (dried shiitake mushrooms are more fragrant) and dice, shred the onion, and boil and peel the quail eggs for later use.

Heat the pan with a little oil and stir the onions and green onions until browned, add the diced meat and stir-fry until the oil is slightly browned. The meat is slightly browned, and a little cooking wine is added. Then add the dark soy sauce, light soy sauce, star anise, cinnamon, rock sugar, Shiitake mushrooms, add water to submerge the meat. After the high heat is boiled, turn to a low heat and simmer slowly. One hour later, add the quail eggs and continue to simmer for another hour. Be careful to flip it from time to time during this period to avoid sticking the pot. Before eating, add salt to adjust the saltiness according to personal taste.
