Maqiao tofu (dried) is a traditional specialty food in Maqiao area with a sweet aftertaste. It is a product with strong local characteristics. Maqiao tofu (dry) has become a delicacy on the dinner table of urbanites because of its unique taste. In the home cooking method, pork ribs and tofu are simmered on a low fire until the ribs are crispy. In summer, Jiuzhihuamei is added and stewed together. The taste is sweet and sour, which is a very good delicacy.

Braised Pork Ribs with Plum Sauce and Maqiao Dried Beans

1. Soak pork ribs in clean blood first

2. Tofu sliced diagonally

3. Jiuzhihuamei, sliced ginger and star anise

4. Pour in the base oil and heat it for 5 minutes first, add the seasoning and sauté

5. Add pork ribs and stir fry until all the ribs are discolored

6. Add cooking wine

7. Pour in the plum

8. Add 2 tablespoons of light soy sauce and 1 tablespoon of dark soy sauce

9. Stir-fry evenly and add boiling water, the amount of water and food is almost equal

10. Cover high heat for 5 minutes, then turn to low heat and cook for 1 hour

11. Then turn on the high heat and cook for 2 minutes, do not let the soup dry, turn off the heat

12. Sprinkle with chopped green onion and serve

Tips:

1. This dish stews all the plum flavor into the soup. The sweet and sour taste is just right, so there is no need to add sugar to taste;
2. The ribs should be simmered over a low heat to make the bones crisp and crumbly.
