Braised Pork Trotters
1.
When buying pig's trotter, let the merchant use a burning gun to burn off the surface hair. The skin is slightly yellow. The most important step is to cook the pig's trotter. Soak the blood in cold water for 30 minutes, change the water 3 times halfway, clean up the black spots on the surface, and set aside.
2.
Scallions, ginger, garlic, cinnamon, bay leaves, fragrant fruit, star anise, rock sugar, set aside. (Friends who like spicy can put a little dried chili)
3.
Pour cold water into the pot, add the ingredients and sprinkle with boiled water, cook for 5 minutes on high heat without a lid to remove the smell of burnt pig hair.
4.
Remove the pig's feet to control the water (no need to rinse with cold water), pour out the soup and use it.
5.
Add oil in a cold pan and stir fragrant spices.
6.
Add the trotters and rock sugar and stir fry for 1 minute.
7.
Then put light soy sauce, dark soy sauce (color), a little salt, add boiling water to soak the trotters, and bring to a boil.
8.
Turn the casserole to a low heat for 1 and a half hours (turn it halfway to avoid sticking to the bottom). If the elderly likes to be more waxy, you can extend it for 2 hours.
9.
After an hour and a half, harvest the juice from the fire, sprinkle with chopped green onion, and you're done!
10.
Do you really want to have a bite? bring it on! Get started! For the family, for him!
Tips:
1. The most important thing is to burn pig's trotters. 2. The casserole tastes the best. I have tried using an electric pressure cooker. There is too much water and the taste is not enough.
