The gorgeous ruddy color, coupled with the salty, sweet and glutinous taste, and the rich collagen, are really delicious.

Braised Pork Trotters

1. Prepare a trotter, soak it in water, carefully scrape it, and chop it open.

2. Boil water in a pot, put the trotters after the water is boiled, blanch the water for a few minutes, remove and drain the water. Cut ginger into slices of ginger.

3. Heat the oil in the pan, stir fry the rock sugar until it melts, and fry the sugar color.

4. Remove the trotters, turn to high heat and stir fry, add sliced ginger and pepper in the middle.

5. Add enough water, add phoenix soy sauce, cooking wine, a teaspoon of white pepper, star anise, and some salt. After boiling, cover and simmer. Bring to a high heat and simmer for about 1 and a half hours.
