Trotter is rich in collagen and has a lower fat content than fatty meat. It can prevent and treat skin wrinkles, enhance skin elasticity and toughness, and is of special significance for delaying aging and promoting growth and development of children. For this reason, people call trotters "beauty food" and "a delicacy similar to a bear's paw."

Braised Pork Trotters

1. Chop the trotters (I asked the seller to chop them for me) and wash them with clean water. Cut green onion into sections and slice ginger.

2. Put the trotters in a pot under cold water, add green onions and ginger, boil the water and cook for 2 minutes.

3. Remove the trotters, rinse with cold water to cool down, and drain the water.

4. Put an appropriate amount of oil in the pot and pour rock sugar. Stir-fry over low heat until amber.

5. Pour in the trotters and stir-fry evenly to make them colored.

6. Pour in light soy sauce, dark soy sauce, cooking wine and ginger slices and continue to stir fry. Turn off the heat after the color is even.

7. Wrap the star anise and pepper with gauze and tie it up.

8. Pour the pig's trotter and gauze bag into an electric pressure cooker, and add water that just covered the pig's trotter.

9. Select [Beans/Tendrons] mode, 40 minutes. The default pressure is 70kPa.

10. After entering the keep warm mode, open the lid. Select the [flavor and juice] mode for 8 minutes. Out of the pot.

Tips:

If the electric pressure cooker does not have the function of [flavor and juice extraction], move the trotters back to the wok and heat up the juice.
