Braised Pork with Pleurotus Eryngii

Prepare the ingredients as shown

Wash and cut the eryngii mushrooms, and change the surface with a knife.

Cut the pork belly into cubes and stir in a frying pan to get the lard.

Pour out the excess lard and add the shallots, ginger and garlic cloves. Add rock sugar, 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of cooking wine and a dried chili, and stir-fry evenly.

Add in water without any ingredients, turn to a low heat and simmer for 30-40 minutes.

After the pork is crumbled, add the eryngii mushrooms, simmer for another 10 minutes, and season with a little salt.
Tips:
If it is salty, you can add less rock sugar. Its purpose is to enhance the color, freshness and flavor.
