Braised Rabbit Meat and Potatoes

Cut rabbit meat into small pieces and float in cold water for 2 hours.

In a pot under cold water, add cooking wine, ginger, and green onions.

Wait for the blood to float out and fish out.

Cut potatoes into pieces with a hob.

Chili, green onion, Chinese pepper, grass fruit, garlic, star anise, set aside.

Fry the potatoes in hot pan with oil until the skin is crispy and yellow, so that the potatoes will not break easily afterwards.

Stir-fry rabbit meat with oil in the bottom of the pot.

Add chili, spring onion, pepper, garlic, star anise and stir-fry until the rabbit meat is dry, add light soy sauce.

Put soy sauce.

White sugar, continue to stir fry.

Add water to submerge the rabbit meat and bring it to a boil.

When the water is boiled until two quarters are left, add the potatoes and simmer.

Line pepper cut into sections.

Add chicken essence and garlic when it comes out of the pot and it's ready.
Tips:
Heat water in the pot, the cold water meat will be very hard.
Put light soy sauce and appropriate amount of soy sauce.
