Braised Tofu
1.
Break the soft tofu into small pieces, soak in lightly salted water for 10 minutes, then drain the water and set aside.
2.
Bring to a low heat in a wok, add ginger, minced garlic, dried chili powder, and bean paste in turn to fry the red oil.
3.
Pour in tofu cubes, appropriate amount of water or stock, seasoning with toned and low heat for a few minutes, wait until the tofu swells, hook in water, starch, pour the cooked oil and gently push it to a bowl, and finally sprinkle with green onion.
Tips:
1. Soak the tofu to remove the beany smell.
2. Because the bean paste is salty, less salt should be added.
3. Stir-fried dried paprika should be cooked in a cold pan with cold oil and low heat to produce red oil.
