Braised Tofu with Double Peppers

2 pieces of old tofu, cut open from the middle, cut into diced tofu, put in a bowl, add appropriate amount of salt and boiling water, soak in flavor. 2 large green peppers, remove the seeds and stems, and cut into diced green peppers for later use.

Two preserved eggs, peel off the shell, cut into preserved egg cubes and put them in a bowl, then knock 3 eggs into the preserved egg bowl and beat them evenly.

Heat the pan to remove the oil, light the pan, sprinkle a small amount of salt on the bottom of the pan, add tofu, shake the pan, and fry slowly. Turn the tofu over after frying it. Don't fry it too old and beat out the tofu.

Add appropriate amount of oil to the pan, pour in the egg liquid, turn the pan and fry it into an omelet. Shake the pot to fry on one side, then turn the egg over. After frying on the other side, scratch the omelet. Pour diced tofu, add appropriate amount of water (or stock), salt and white pepper, and cook until the soup is milky white. Pour in diced green pepper and add some steamed fish soy sauce, stir fry evenly. Green peppers are cut off, and when the soup is right, you can start the pot.
