After eating this dish for the first time in a Hakka restaurant, I never forget it. I like the tenderness of the yellow bone fish, and I prefer the taste of the tofu after absorbing the braised juice. Later, I learned that the yellow bone fish has a high nutritional value and can nourish and warm the stomach, so this pour dish often appears in our restaurant! "

Braised Tofu with Homemade Yellow Bone Fish

1. The yellow-bone fish is cleaned, knifed, and placed in a plate for later use.

2. Shred the ginger, cut the green onion into sections, and set aside. Wash the old tofu and set aside.

3. Cut the old tofu into pieces and set aside.

4. Heat the pan, about 60% of the heat, add a proper amount of oil.

5. Put the yellow bone fish into the hot pot, fry for 1 minute on both sides of medium and low heat, remove and set aside.

6. Put shredded ginger and green onion into the pot and sauté.

7. Add the fried yellow bone fish.

8. Put in the right amount of light soy sauce and drop a few drops of dark soy sauce.

9. Put in old tofu cubes.

10. Put in the water that is less than three-quarters of the fish's body and turn to the fire.

11. After the high heat is boiled, turn to medium heat and simmer for 20 minutes.

12. Add an appropriate amount of cooking wine.

13. Prepare a little water starch.

14. Add to the pot evenly, and stir-fry gently for 1 minute on high heat.

15. Pick up the pot, put it on a plate, and garnish with scallions and blanched carrots.

Tips:

Tofu should use old tofu, and the braised tofu tastes the best.
