Bread Machine Version Purple Sweet Potato Braided Bread

Prepare materials.

Put all the main ingredients except butter into the bread bucket in order, open the mobile APP and select the "normal kneading" function for 10 minutes.

After kneading the noodles, add softened butter, and select "normal kneading" again for 35 minutes.

After the dough is rounded, put it into the bread machine, select the "fermentation and thawing" program to carry out the basic fermentation, the time is 30 minutes, and the dough will be 2.5 times the size.

Take out the fermented dough, knead it round after exhausting, cover with plastic wrap and relax for 15 minutes.

After the loosened dough is vented, roll it into a cube of about 30*20 size, and smear the purple potato filling on the center 1/2. Fold both ends inward and pinch the seams tightly. Spread purple potato filling on 1/2 of the dough. Fold in half, pinch and stitch all the side seams.

Use a sharp knife to cut the dough into three pieces, with the cut side facing upwards and slightly press to flatten it. Braided into three strands. (My purple sweet potato filling is the moon cake filling I made the day before, so it will be slightly dried, and it will fall off slightly during plastic surgery. It is recommended to use a thinner filling for better results.

Press the 2 ends of the whole braid into the bottom and put it into the bucket of the bread machine. Open the mobile APP, select the "fermentation thawing" function for the last fermentation, set the time to 40 minutes,

Send it to 8 minutes full, and brush the surface with egg wash.

APP selects the "baking" function, the time is 35 minutes.

Tips:
1. Leave a small amount of egg liquid to coat the surface when laying eggs.
2. My purple sweet potato filling is a bit dry, and the filling effect is better if it is thinner.
