Brine Shrimp

Rinse the prawns, put them in a large bowl, add a spoonful of salt, pour half a bowl of water, and soak for 30 minutes. (Soaking is mainly to remove bacteria from shrimps.)

Clean the shallots, beat them into green onion knots, scrape off the skin of the ginger, rinse and cut into thin slices, rinse the pepper and star anise and set aside.

Soak the prawns and rinse them. Use a toothpick to poke in the first section of the shrimp head and body. Pick out the shrimp thread, finish all the shrimp, clean it, and drain the water for later use.

Put the green onion knot, sliced ginger, star anise, and pepper in the pot, pour 800 ml of water, and bring to a boil.

Bring the water to the boil, add a spoonful of cooking wine, a spoonful of salt, and cook for two minutes to fully boil the flavor of the spices.

Add the cleaned prawns and cook on high heat for three minutes, not more than three minutes. If you cook for too long, the prawns will get old.

Cook the shrimps, add a little sugar and stir evenly to get out of the pot. (You don’t need too much sugar, just to improve the freshness.)

Cook the prawns, remove them with a colander to control the water, and remove the green onion knots, ginger slices, pepper, and star anise.

Soak the drained shrimp in ice water for more than ten minutes, then drain the water and put it on a plate, and add a small saucer, half light soy sauce and white vinegar. For babies who don’t like the sauce, don’t use it. Just eat.

Tips:
1. Soak the prawns in salt water for 30 minutes, which can be used for disinfection. After soaking, use a toothpick to pick out the shrimp thread. The shrimp will not have a muddy smell.
2. Before cooking the shrimp, add green onion knot, sliced ginger, pepper, star anise, add water, boil on high heat, add salt and cooking wine and cook for 2 minutes, then add the shrimp and cook for 3 minutes. The shrimp is tender and tastes good.
3. Use ice water to soak in the last step. It depends on your personal preference. If there is no ice water, you don't need to soak.
