Brine Shrimp

Set aside fresh shrimp.

Ingredients are set aside.

Put the ingredients into the pot and add the right amount of water.

Add salt, a tablespoon of cooking wine, and cook until the salt melts. After cooking, scoop out a bowl and freeze in the refrigerator.

Pull one side of the joint between the head and tail of the shrimp and pull out the shrimp intestines.

Dispose of all the shrimps, bring the water on the pot to a boil, and put the shrimps on high heat.

Stir it and turn off the heat immediately when it boils.

Put the frozen soup in the refrigerator, put it in a large bowl, and add ice cubes.

Take the shrimp out and put them in the pre-frozen soup, cover with ice cubes, and keep them in the refrigerator for ten minutes.

Also prepare the dipping sauce according to personal preference. (I used sesame oil, ground ginger, chili oil, etc.)

Place the chilled shrimp on a plate.
