Butterfly Pea Flower Sticky Rice Pot Stickers

First wash the dish of bean curd a little bit, wash the dust on the surface, put it in a bowl, pour in an appropriate amount of water, and soak out the color.
Wash the glutinous rice and pour it into the water that soaks the bean curd. The butterfly peas can also be soaked together, so that its color can be fully analyzed. It is best to soak it overnight.

About eight hours later, the glutinous rice was completely colored. Pour the glutinous rice into the rice cooker. Because the water had been soaked for the whole night, I poured out the water used to soak the glutinous rice, soaked another portion, and added the new one. Pour the soaked bean curd juice into the pot, set the cooking button to cook the rice. Because the glutinous rice has absorbed a lot of water after soaking overnight, the amount of water for cooking rice should be reduced by about half compared to the usual cooking rice, and the water should just be under the glutinous rice.

Turn on a low heat and slowly fry the bottom of the potsticker until it is slightly browned, and the bottom is slightly hardened, as shown in the picture.

Pour half a bowl of water in the pot and turn to high heat. Because the ingredients are all cooked, you only need to braise the skin. So you don’t need too much water, about one-third of the pot stickers, which is better than fried dumplings. The water should be much less. If there is too much water, the glutinous rice will become sticky and affect the taste.

When the sauce is slightly collected and the bottom is still blistering, open the lid and turn the heat to a low heat to collect the sauce. The water on the surface of the pot stickers has completely evaporated, and it is very beautiful and crystal clear.
Tips:
The glutinous rice can be cooked one night in advance. If it is freshly cooked, let it cool well before frying, so that the grains are distinct and the taste is more delicious.
