Carrots Mixed with Enoki Mushrooms

Remove the roots of enoki mushrooms, wash and tear apart

Shred carrots, mince garlic

Bring water to a boil, add a little olive oil

Add the carrots and blanch for about 1 minute to remove and drain the water

After the water is boiled again, add the enoki mushrooms, blanch for 5-10 seconds, and quickly remove the dry water.

Put the blanched carrots and enoki mushrooms in a bowl

Add the chopped green onion and garlic

Add cold soy sauce

Put oil in the pot, add a few peppers, boil and pour into the bowl

Tips:
1. When the enoki mushroom is blanched, it only takes a few seconds to pick it up. The enoki mushroom produced in this way is very crispy;
2. Add a little edible oil to the water when blanching, so that it can enclose the moisture in the vegetables, make them tender, and help maintain the color of the vegetables.
