Carrots, Peanuts and Spinach
1.
Fresh spinach is washed with light salt water, peanuts are roasted in an air fryer in advance, and then peeled.
2.
Add the right amount of water to the pot and a few drops of oil to make the blanched spinach greener. Boil the spinach in the boiling water, remove the cold water, remove the water, and cut into sections. Spinach contains a lot of oxalic acid, which hinders the body's absorption of calcium, so when you eat spinach, you should first use boiling water to soften it, remove it or stir-fry or mix.
3.
Peel the carrots, wash and cut into strips, blanch them in boiling water to remove the raw flavor, remove them and place them in cold water, and then control the moisture.
4.
Take a large pot and add the chopped spinach, blanched carrot sticks, peeled peanuts and chopped garlic.
5.
Add salt, sugar, vinegar, peanut oil, chili oil, and a little soy sauce to taste and mix well. Add seasonings as you like, and friends who like spicy can add more chili oil.
