Catfish Tofu Soup

1. Remove the internal organs of the catfish, wash and chop into pieces

2. The diced catfish is marinated for a while with ginger slices and cooking wine

3. Water tofu cut into small cubes

4. Shallots, chopped green onions and spare

5. Heat up a frying pan, add ginger slices and sauté

6. Put the catfish in a frying pan and fry slowly until it is broken and one side is slightly golden

7. Fry on one side and gently turn to the other side and continue to fry for two minutes

8. Pour in two bowls of water, just before the fish meat (you can add more water if you like to drink more soup)

9. The water is almost at this location.

10. Cover the pot, turn to a low heat and continue to boil for ten minutes until the fish soup becomes milky white.

11. After ten minutes, open the lid, use a spatula to gently push against the bottom of the pot to prevent the fish from sticking to the pot, and use the spatula to skim the upper layer of grease

12. At this time, the fish soup slowly boiled to milky white

13. Pour the tofu into the pot

14. Can be spread lightly on top of the fish to prevent the lower layer of fish from being rotten

15. Continue to cook for three minutes

16. Add appropriate amount of salt to taste before serving (I personally don’t like to add chicken essence, so just add salt)

17. It's out of the pot, it's fragrant~~\(≧▽≦)/~

18. The fish and tofu are very tender

Tips:

1. The catfish is marinated with ginger slices and cooking wine for a while in advance to remove fishy;
2. There will be a little oil in the process of cooking fish soup, which can be skimmed off with a spoon so that the fish soup will not be too greasy;
3. Tofu choose soft tofu, the taste will be more tender and smooth;
4. Catfish is easy to cook, so it should not be simmered for too long, so as not to affect the taste.
