Celery Beef
1.
Soy sauce and light soy sauce are added to beef.
2.
Add the beaten egg mixture.
3.
Add cornstarch.
4.
Wear gloves and grasp it with your hands.
5.
After mixing well, put it in the refrigerator for 30 minutes (put it in the cold storage area, non-freezing area).
6.
Grab it well again after taking it out (because the egg liquid and seasoning will be deposited on the bottom if it is left standing).
7.
Add sesame oil.
8.
Grab the sesame oil and beef slices well.
9.
Pour the beef into a pan at 180°C (pour the beef immediately after the test temperature reaches 180, then turn off the heat).
10.
Quickly remove the heat evenly.
11.
The beef slices are fried until they just lock the gravy (according to the origin of the beef and the ratio of lean beef to fat beef to control the time, the more fat, the longer the frying time will be).
12.
Pick up quickly, and when the surface is locked, pick up quickly, do not hesitate to avoid loss of gravy.
13.
Put the beef slices in the oil strainer and set aside.
14.
Put minced garlic in the pot.
15.
After the garlic aroma comes out, pour in dried chili and black tempeh (pour at the same time).

17.
Add a quarter teaspoon of brown sugar.
18.
Add a spoonful of rice wine.
19.
Then add 1 spoon of oyster sauce.
20.
Finally, add 1 tsp of sucrose (if there is no sucrose, replace with white granulated sugar).
21.
Pour the beef in, turn on high heat, stir fry and mix well.
22.
Put the chopped celery and chopped cilantro into the pot before they get out of the pot and mix for 30 seconds to complete the dish.
Tips:
1 The beef must be cut against the grain to lock the gravy.
2 The sesame oil added before the pot is not only to increase the fragrance, but the most important thing is to separate the beef slices.
3 The beef must be tender, and the oil temperature needs to be at least 180°C. The frying time must be adjusted appropriately according to the meat condition, which is not the same. But remember that the thinner the beef is, the shorter the time. For example, the fried beef is thinner, so the frying time is 15 seconds. If it is snow beef or Japanese Wagyu beef, the time should be extended accordingly. Of course, the same Different parts of the cow have different frying times.
