1. Pick the leaves of celery, wash and cut into small pieces; add salt, chicken essence, and white sugar to taste.

Tips:

1. The purpose of adding white sugar is twofold: one is to remove fishy, and the other is to improve freshness.

2. If you are not used to eating raw celery, blanch it first, add it to cold water and let it stand for a while, then control the water for later use.
