Celery Shrimp Balls

1. Wash the shrimp and remove the head and skin. Use a knife to cut the spine to the end. The knife is deeper but don’t cut through.

2. Sprinkle a little salt and stir to make the shrimps white, rinse with clean water, and then use kitchen paper to absorb the moisture.

3. Put the dried shrimp into a bowl, add a little salt, a little pepper, and a little baking soda (pinch it with your index finger and thumb). Don't make too much, mix a little bit of dry starch.

4. Put half a teaspoon of egg white in the refrigerator for 2 hours

5. Add chicken powder to the water starch and stir evenly for later use

6. Wash celery

7. Flatten the knife and cut into thin slices with a spatula

8. The cut piece is shown in the picture

9. Place a pot of water to boil, add an appropriate amount of salt and a few drops of oil, quickly blanch the celery in the boiling water, remove it and let it cool and dry it for use

10. As shown in the code into the bottom of the plate

11. Heat the pot into the oil and heat up, add the onion and ginger to fragrant, remove the onion and ginger without leaving any oil for later use

12. Put the shrimp balls in the pan, fry them until they turn slightly into pink. The shrimps curl into balls and immediately hook into the water starch, add a little oil and turn off the heat.

13. Pour on the celery, and top with the remaining juice in the pot and serve.

Tips:

Marinating shrimp balls is very important, don't season too much, otherwise it will cover up the deliciousness of the shrimp

Don’t have too much egg white, otherwise the fried shrimp balls will not be bright

Add baking soda and put it in the refrigerator to make the shrimp firmer and crisper.

The water starch should not be too thick, slightly thinner, so that the oil will be brightened in the end.

Don't have too much juice. Just right

In fact, the more seemingly simple the dish, the more complicated it is, but as long as you follow the steps closely, you will definitely make this dish.
