Chaoshan Taro Puree
1.
Peel the taro and cut into four pieces. Steam in a steamer for 30-40 minutes until cooked.
2.
Wipe the steamed taro with the back of a knife repeatedly and vigorously until it is like mud, without the slightest particles.
3.
The fried lard is about half a bowl, and the oil residue is removed (the oil will be more appropriate for taro mud).
4.
Put in the taro on a low heat, and use a spatula to move the taro in one direction, and repeatedly wipe it until it feels slippery (the longer the wipe, the better).
5.
Add sugar and continue to wipe until the sugar is completely melted.
6.
An authentic "Chaoshan taro mud" is done. If you like the flavor of coriander or tangerine peel, you can chop it up and add it and mix it well!
Tips:
1. Be sure to use lard, preferably freshly fried, it tastes more fragrant and smooth. 2. Repeat to wipe the taro until there are no particles at all, so that it will melt in your mouth.
