There are always holes in the chicken cake. After many explorations, I finally mastered how to make a tender and smooth chicken cake. This is to share the victory results with everyone~~~"

Chicken Cake

1. Knock an egg in a small bowl

2. Add the same amount of water as the egg liquid to another small bowl. The ratio of water to egg liquid can be between 1:1 and 1:1.5. It is better to use warm water for clean water. Add salt to the water and stir evenly to make it fully dissolved. Table salt can also be put in the subsequent egg mixing liquid, in order to be more even, put it in the clean water first.

3. Mix the salted water and the egg liquid and stir until the egg liquid is completely dispersed. (At this time, there will be a lot of bubbles on the surface, so if you steam it directly, the bubbles inside are the cause of the holes.)

4. Now proceed to the process of eliminating bubbles-sieving. Pass the egg liquid through a fine sieve, the bubbles are left on the sieve

5. The egg liquid after the sieve looks like this, gently blow off a small amount of air bubbles on the surface, but ok

6. Add an appropriate amount of soybean oil. The chicken cake steamed with soybean oil is golden and beautiful. There is no soybean oil plus other vegetable oils. The color may be worse, but it will not delay the taste.

7. Upper steamer

8. The crucial second craft is here-buckle the plate. This will prevent the egg liquid from foaming during the steaming process. (If the mouth of the container for egg liquid is too large, it can be covered with plastic wrap. The effect is the same. It's just more troublesome than buckling the plate. I tried.)

9. Cover the pot and bring the water to a boil. Steam for 12 minutes over medium heat. (There is no need to worry about anything during the steaming process, such as opening the lid to deflate, etc., which have been solved by the process of buckling the plate.)

10. Time is up, serve ~~ Is it delicate and smooth~~~ (If you use multiple eggs, the time can be slightly longer, about 15 minutes is more appropriate)

Tips:

Sifting is to eliminate air bubbles; to buckle the plate is to smooth the surface of the egg during the steaming process. These two steps are very useful, and the rest can be used freely. It is also good to add some chopped green onions, dried shrimps, etc. It is all up to personal preference~
