Chicken Rice Flower

5g salt, 10g fine sugar, 1g garlic powder, 1g ginger powder, 1g chili powder, 1g black pepper powder, 2g white pepper powder, 15g water, and mix it with [marinated meat]. Chicken thighs are boneless and diced (you can directly use the bagged boneless and skinless chicken thighs), add [marinated meat ingredients] and mix well.

80g corn starch, 200g all-purpose flour, 3g baking soda powder, 2g garlic powder, 4g white pepper, 4g salt, and 2g black pepper to make 【Fried Chicken Breaded Flour】, mix and mix well.

Add 90g of egg, milk and 【Fried Chicken Flour】in the diced chicken thighs.

Tips:
1. There are two difficulties when making chicken rice flowers by yourself. One is seasoning, and the most important thing is to add garlic powder. With garlic powder, it has that special aroma.
2. The other is to make chicken rice flowers comparable to K Kee, crispy skin is the key. To make crispy crusts, there are usually "three passes": breading in flour, egg liquid, and bread crumbs, but this method is actually not effective when making chicken rice crackers. There are two kinds of breading flour used here: flour and starch, cornstarch (not corn flour) is used for the starch, and an appropriate amount of baking soda is added. The baking soda is fluffy. It will be crispy when it is fried, and it will not soften after a long time.
3. Chicken thighs should be used for chicken, which is tender and firm. Chicken breast is also fine, but the taste is not as good as chicken thighs, and it is not handled well when marinated, and it will be more fired when fried. When frying, pay attention to the temperature of the oil and the frying time. The advantage of chicken thigh meat is that it can be fried for a little longer.
The chicken rice flower made in this way is golden in color, attractive aroma, tender and crisp. I bought a bag of KFC chicken rice noodles and mixed it with my own fried chicken. My family would never eat it.
