Chinese New Year Fancy Steamed Bun with Bean Paste
1.
Spread the yeast evenly with warm water, pour in the flour, and stir to disperse. Pour the hot water into the flour a little bit and stir it into a flocculent shape.
2.
Knead it into a dough and leave it in a warm place for proofing. After about 2 hours, the volume will ferment to twice its size.
3.
Take out the dough and place it on the chopping board, and simply knead it. If you have baking powder at home, you can add a small amount of baking powder during kneading, knead it for 10 minutes and then knead it to form a dough. If you don't have baking powder, you don't need to add it. (The purpose is to help puffy hair and sweeten)
4.
Knead the dough into a thicker strip.
5.
Cut into large pieces to make a flour paste.
6.
Be a little hedgehog first. Take a small piece of dough and knead it into a round ball.
7.
With your hands in a V shape, gather slightly under the dough and knead the small dough into an inverted triangle. (I took a photo with my phone in my right hand, but didn’t look into the mirror)
8.
Pick up the dough and arrange it slightly, one end is slightly pointed (hedgehog's head) and the other is slightly rounded (hedgehog's butt).
9.
Use the tip of a scissors to slightly tilt from the tip of the dough and cut out small corners to make a small hedgehog's thorn. Finally, decorate the eyes of the little hedgehog with two grains of black rice.
10.
A little hedgehog is ready, cute and cute.
11.
Make a little rabbit again. Take a small dough and cut in half.
12.
Use your hands to make a long strip as long as chopsticks, about the same thickness as your index finger. Dip the two noodles together.
13.
Bend the noodles about two inches above the noodles, and curl the lower noodles opposite to the upper noodles. Approximately S type.
14.
Such a pattern is folded, such as the S type. But the upper bend is slightly sharper, and the lower part is smoother.
15.
Slightly squeeze one finger on the upper strip and press a stamp with a toothpick to make rabbit ears. A red date is stuffed into the upper bend to make rabbit eyes. A little rabbit came out.
16.
Bunny and hedgehog buns.
17.
We also make the bean paste buns in fancy styles, which look and taste delicious. Knead the dough into a ball and squeeze it, and add an appropriate amount of bean paste.
18.
Stuff the stuffing downwards, tighten the edges of the dough
19.
Squeeze the seal tightly.
20.
Put the sealing part down on the chopping board, arrange it into a circle, squeeze it slightly.
21.
Take a red date and stuff it into the center of the bean paste bun
22.
Use toothpicks to emboss lines on the edge of the bean paste bag
23.
One by one, the red bean paste buns like pumpkin florets are ready
24.
Take a photo and wake up for another 10 minutes by the way.

Bunny Buns
26.
Put in the steaming curtain, put in the steamed buns, and steam in a pot on cold water. Start with a high fire, steam the water and boil the pot and start timing after the pan is gassing. The fire will be high for 10 minutes, then turn to a low fire and steam for another 10 minutes. A total of 20 minutes, don’t rush to open the lid after turning off the heat, continue to use the remaining temperature for 10-15 minutes, which is conducive to the expansion and shaping of the steamed buns without collapsing and shrinking. Otherwise, the steamed bun will shrink when it suddenly becomes cold after boiling it in a hurry. Boring is the use of residual temperature to cool down a little bit.
27.
The steamed little hedgehog is as round as a bunny and won’t shrink. Let’s have a cage~
Tips:
Be sure to steam the steamed buns in a hot pot on cold water. First high heat and then low heat. After steaming, do not rush to open the pan. Turn off the heat and keep it stuffy for 10-15 minutes to dissipate heat. In this way, the steamed buns will not collapse, otherwise the noodles will not be fluffy when the steamed buns shrink instantly when cold.
