Chongqing Grilled Fish

One grass carp.

Cut off the tail (because the baking tray can't fit, and kids can't eat spicy food), drizzle a proper amount of rice wine and coat the surface with salt by hand.

Use appropriate amount of soy sauce and peanut oil to make a juice, brush inside and outside with a brush, and marinate for one hour.

Tips:
1. The grass carp needs to be marinated about an hour in advance to taste.
2. Various side dishes can be selected according to your preference.
3. When frying the side dishes, put in the harder ones first.
