Chopped Pepper Fish Head Tofu

Prepare all ingredients.

Wash the fish head first.

Cut the tofu into small barcodes and place it on a plate. Sprinkle a small amount of salt on the tofu and marinate for 10 minutes.

Prepare green onion and ginger.

Split the fish head in the middle, add cooking wine, green onion, pepper, white pepper, salt and ginger slices and marinate for 20 minutes

Put the green onion and ginger in the middle of the tofu.

Put the marinated fish head on the plate.

Put a layer of chopped chili on the fish head.

Put water in the steamer to boil, and put the fish heads in. Steam on high heat for 10 minutes, turn off the heat and simmer for 5 minutes.

Take out the fish head and sprinkle with chives.

Put the frying oil in another pot and heat it up.

Just drizzle hot oil on the fish head.
Tips:
Because chopped peppers are saltier, avoid adding too much salt.
