Raw chili.

Garlic, ginger, salt, rice wine.

Rinse and drain the raw chili peppers, and then remove the roots of the chili peppers, dry them or use a paper towel to dry them for later use.

Break the garlic one by one, then use a kitchen knife to cut off the stalks of the garlic, then flatten or beat it with a kitchen knife, remove the garlic skin and garlic core, chop it into pieces, and put it in a spare container. (Garlic: 4 bigger ones, 5-6 smaller ones, just consider it by yourself. After disinfecting the fresh-keeping bottle with 80 degree water beforehand, just dry it and let it cool.)

Rinse the ginger and dry it, cut it into thin slices, cut it into filaments, then cut it into cubes, and chop it into small pieces, then put it into the container in step (4).

After step (6), pour the rice wine, add salt, and then repeat the stirring from top to bottom while turning the bottle, and stir evenly. (The amount of rice wine can conceal the ingredients. The amount of salt should be added for a long time. If you don’t leave it for too long, 30 grams should be fine. When stirring, try not to let the garlic and ginger settle in the bottom of the bottle. It is better to stir a few times.)
