Coconut Chicken Rice

Prepare the ingredients: 2 large chicken drumsticks (cut into large pieces), 2 spoons of turmeric powder, 1 spoon of fish sauce (not steamed fish soy sauce, it is Thai anchovy sauce, you don’t need to put it), 100ml coconut milk, garlic cloves 3 pieces, 1 small piece of ginger, 2 cups of basmati rice, and 100ml of chicken broth (you can substitute the stock or use chicken powder to dissolve in water for later use) 1 lemon slice, 1 small handful of green onion, 1/2 spoon of salt, pepper 1/2 spoon

After the chicken nuggets are washed, drain the water, use kitchen paper to absorb the surface moisture, sprinkle 1/2 spoon of salt on the chicken nuggets (I am used to eat less salt), then 1/2 spoon of pepper, 1 spoon of fish sauce, use Wipe evenly by hand. Then prepare minced garlic and ginger

(Originally, I was going to make burnt rice, but this time because there are too few stoves at home, I use a rice cooker to cook this dish. There is no burnt in the rice cooker. If you want to eat burnt, just You need to use a boiling pot to cook the rice. Similarly, you can directly use the rice cooking pot when frying the chicken. Make sure that there is no water in the pot, put 1 spoon of oil, and put the skin side of the chicken on the lower side. Into the pan, pay attention to the heat oil, fry for 2 minutes

Turn it over and fry for another two minutes. You don’t need to fry it until half-cooked. Then you can fill the chicken. The chicken fat in the pan is left. If there is too much oil, just fill up the oil in the pan. I have leftovers in the pan. About 1 spoon of oil

Put the minced garlic and ginger into the pot, put 1 spoonful of turmeric powder into the pot and stir fry a few times evenly

Add the basmati rice and stir fry evenly

Then add coconut milk and chicken broth, and stir well. (At this time, I have put the rice in the rice cooker. If you use a cooking pot to cook rice, you don’t need to do this step)

Spread the chicken nuggets on the rice, simmer on low heat, not high heat, too much heat will cause the rice to burn easily. After simmering on low heat for about 20 minutes, if you want to eat the scorched rice, turn on medium high heat, ears Close to the side of the pot and listen carefully. If you hear a small crackling sound, it proves that the rice has started to burn. About 20 seconds after hearing the sound, stop the fire. Leave the fire for 5 minutes and it will be fine (I Use the rice cooker to cook as usual, just press the button for cooking)

Tips:
If you want to eat something that is burnt, turn on a medium-high heat, put your ears close to the edge of the pan, and listen carefully. If you hear a small crackling sound, it means that the rice is starting to burn. About 20 seconds after you hear the sound, Stop the fire, stay away from the fire for 5 minutes, and it’s fine.
