Coconut Chicken Soup

Find the three holes in the top of the old coconuts bought in the market, knock them open and pour out the coconut water. (The old coconut I bought has a dry skin, so there are some residues in the coconut water, and I filter it with a flour filter several times. Generally, coconuts are sold in supermarkets. I choose the old ones and use them. The soup is sweeter.)

Also dig out the coconut pulp and peel off the black skin with a knife.

Cut the coconut pulp into small pieces for later use.

Depending on your personal preference, it can be cut into large pieces.

One Qingyuan chicken bought at the market. (It looks quite fresh, so there is no blanching.)

Boil water in a pot, add coconut meat, red dates, and boil on high heat for 20 minutes.

Add chicken and ginger slices.

Bring to a boil, add coconut water, and cook for another 40 minutes.
9.
Cook it out.
