Coffee Jam Eclairs

Prepare the ingredients, 240 grams of low powder, 100 grams of butter, 50 grams of powdered sugar, 2 egg yolks, and 1 egg white.

Beat the butter that has been softened at room temperature with an electric whisk at low speed and add powdered sugar.

Turn the whisk to medium speed and beat the butter until fluffy. Add 2 egg yolks and 1 egg white in three times, and add the next time after thoroughly beating each time.

The instant coffee is ground into powder and then added to the low powder, mix well.

After the butter has been beaten, sift in the low powder and coffee powder.

Use a spatula to stir evenly until there is no dry powder, then knead it into a dough with your hands, wrap it in plastic wrap and store it in the refrigerator for 20 minutes.

Take out the refrigerated dough, roll it into a 3-5mm thick dough sheet, and press it into a shape with a mold.

Use a small round mold to cut out the center of the dough. The number of patches of the two shapes must be the same.

Then put the solid flower piece into the baking tray, and then cover the other round piece of dough on it.

Put jam in the middle hole. The jam should be thicker, and you can put it according to your favorite taste.

After all is finished, put it in the preheated oven, middle level, up and down heat, 180 degrees for about 20 minutes.

Tips:
1. Do not knead the dough excessively, as long as there is no dry powder state. 2. The amount of protein can be adjusted according to the water absorption of the flour. 3. My jam is made by myself and it is thicker. If you buy it, I should choose the thick one.
