Cold Bitter Gourd

Wash the bitter gourd and remove both ends

Cut in the middle with a knife

Then use a spoon to dig out the seeds in the middle

Cut into strips

Then add salt, chicken essence, vinegar, light soy sauce, oyster sauce, mustard oil (you can leave it if you don’t like it), sesame oil, you can put a little less sugar, and just mix it up and serve.
Tips:
The bitter gourd must be tender, or it tastes very woody in the middle
