Cold Chicken Gizzards

Scrape the chicken gizzards to remove the grease and rinse them with clean water.

Put cinnamon, star anise, bay leaves, ginger, and 1 tablespoon of salt in a saucepan.

Pour clean water into the boiling pot.

Pour two tablespoons of soy sauce.

Add the processed chicken gizzards, boil on high heat and simmer for 30 minutes on low heat. After the heat is turned off, the chicken gizzards are marinated in the sauce in the boiling pot for several hours.

Cut the scallion into thin strips, and slice the marinated chicken gizzards into thin slices.

Put the sliced chicken gizzards and green onion on a clean plate, add 1/2 tablespoon of vinegar.

Pour the chili oil and mix well.
