Cold Dried Tofu Shreds

Stack the dried tofu, spread out and cut into thirds

Put water in a pot to boil, add the dried tofu and boil again for 1~2 minutes. The dried tofu becomes soft and remove it. Put it in cold water and let it cool.

Take out the dried tofu and roll it up

Then cut into filaments and shake them open. Cut the filaments as thin as possible, the finer the better

Cut cucumber and carrot into shreds the same as dry tofu, scallion and cut into shreds diagonally, dry chili also cut into shreds, pat the garlic with a knife and cut into minced garlic, and cut coriander into sections

Put the dried tofu, carrots, coriander and dried tofu shreds in a small bowl, top with shredded green onion, minced garlic, pepper powder, salt, sugar and dried shredded chili

Boil the edible oil until it is piping hot and pour it on top, add some sesame oil and mix well to serve.
