Cold Pig Ears

After washing pig ears, marinate them with cooking wine for a while to remove the fishy smell.

Add the dark soy sauce and massage for 10 minutes and marinate for 15 minutes.

Wash the chopped green onion, peel the ginger and cut into thin slices.

Place ginger, star anise, and chopped green onion on the bottom of the casserole.

Put the pig ears in a casserole along with the pickled soy sauce.

Add the right amount of water and cook the pig's ears.

After boiling the water in the casserole, turn to medium-low heat and cook for 40 minutes.

Cook until the chopsticks can easily be inserted into the ears of the pig and turn off the heat.

Remove the cold water from the ears and drain the water.

Prepare the ingredients for the seasoning.

Chop garlic, chili, and cilantro.

Take a clean bowl and add garlic, chili and coriander, and add some spicy oil.

Add 50 grams of soy sauce and mix well.

Cut pig ears into strips.
