Cold Trotters

After the pig's feet are cleaned, use a knife to cut the front toe.

Make a deep cut in the "belly" of the trotters.

Cut the trotters along the lengthwise direction to make it easier to taste.

Pour enough water into the pot, add the crushed ginger, add appropriate amount of salt to boil on high heat, then change to low heat and simmer for 40 minutes

After the boiled trotters are allowed to cool, they are soaked repeatedly in water to remove greasiness.

Use a knife to break the soaked trotters into large pieces.

Wash the red hot pepper and cut into circles, mince the garlic.

Put the chopped trotters, minced garlic, and red hot pepper rings into a clean small pot, and sprinkle with coriander.

Take a clean bowl, pour one tablespoon of sugar and one tablespoon of light soy sauce.

Sprinkle an appropriate amount of refined salt.

Pour in 1/2 tablespoon of vinegar.

Sprinkle a little pepper powder.
13.
Pour the right amount of cooking wine according to your preference.
14.
Pour the prepared sauce into a small basin with pig's feet.
15.
Add a tablespoon of red oil and mix well.
Tips:
1. Pay attention to safety when chopping raw trotters.
2. After the trotter is cooked, let it cool and soak and rinse with clean water to get rid of greasy.
3. The cholesterol content in trotters is high, so the elderly with weakened gastrointestinal digestion function should not eat too much at one time; and those with hepatobiliary disease, arteriosclerosis and hypertension should eat less or not.
