Cold Watermelon Peel

Remove the top layer of green peel from the watermelon rind, slice it into thin slices (shredded and sliced are fine), then sprinkle some salt and marinate

Use your hands to squeeze out the water from the marinated watermelon rind, add minced garlic, vinegar, and cold soy sauce. Pour oil in a pan to heat, and fry the fragrant pepper and dried chili. Pour the fried pepper and dried chili together with oil on the minced garlic, then add some chicken essence and mix well.
Tips:
1. There is no need to add salt when mixing the watermelon rind, because after pinching the water from the rind, the watermelon rind is already salted.
2. Leave some red soil on the watermelon peel, and the dishes will look much more beautiful.
3. People with cold and damp spleen and stomach are not easy to eat.
