This is a cold dish with the highest serving rate in my summer. In summer, there is usually no appetite, the weather is also hot, and I don’t want to go to the kitchen to start cooking. Therefore, I often make cold yuba and eat it. It is delicious and full. Prepare a cold dish to fill my stomach. There is no need to fry it. Good news for housewives. And my family also likes this dish very much, often make this for supper, every time I have to mix a big pot to eat it. I like to add a little hot sauce to make cold yuba. It is not too spicy, and it opens up the taste buds easily. It is a great supper.

Cold Yuba

1. Prepare the ingredients and put a little leeks on it, which is delicious and beautiful. The red pepper is purely for garnish, so you can leave it alone. Soak the yuba in advance, soak in cold water for more than 2 hours. The shape of the yuba will be neat. If it is quickly soaked in hot water, the yuba will be easier to break, and it will become watery, which will affect the taste.

2. Soak the yuba in cold water, cut into small pieces, wash and cut the leeks, and cut the red pepper into thin strips.

3. Add water to the pot to bring to a boil, put in the sliced yuba, and then turn off the heat when the water is boiled. The yuba is already cooked, just blanch it.

4. After turning off the heat, put the leeks and red pepper shreds in the pot and blanch them. The red pepper shreds and leeks are easy to cook, so that's it.

5. After blanching the yuba, leeks and red pepper shreds, rinse them with cold boiled water.

6. Squeeze the dried yuba with water and put it in a cooking bowl.

7. Add hot sauce, light soy sauce, sugar, balsamic vinegar and sesame oil.

8. Mix well with all the seasonings, and serve the delicious and refreshing cold yuba. Let's eat.

Tips:

1. Hot sauce and light soy sauce have salty taste, so there is no need to add salt.
2. I like to put some green pepper oil when mixing cold dishes, if you don't like it, you can omit it.
3. The dried yuba must be squeezed out of water before adding seasoning and mixing well.
