Corn and Yam Trotter Soup
1.
Cut half a pig's trotters into small pieces, clean the miscellaneous hairs and impurities.
2.
Add to the pot, drip a little cooking wine, a few slices of ginger, and blanch the trotters.
3.
Boil the bleeding foam.
4.
After blanching, rinse the trotter under running water and drain it for later use.
5.
In an electric cooker, add seven or eight slices of ginger, 4 dried chilies, and one star anise.
6.
After draining the pig's trotter, add enough boiling water at one time, turn on the power and simmer over low heat.
7.
Two sweet corn and one yam, cut into sections for later use.
8.
After two hours, add sweet corn and yam, and simmer for another two hours.
9.
Add salt to taste, turn off the power and remove from the pan.
Tips:
1: When peeling the yam, it is best to wear gloves, otherwise the juice of the yam will stick to the skin and it will be very itchy.
2: The trotter soup itself is very delicious, it is recommended not to put too much seasoning, so as not to cover up its own fragrance.
