This autumn, I don’t have enough fresh and tender corn. I love all kinds of ways of eating. Today I will share with you a steamed cornmeal rice cake. It is made with juice from fresh and tender corn and matched with flour and corn flour. The thick look is special. I have an appetite, a strong taste of tender corn, Xuan is soft and sweet, and the taste of autumn is so delicious, it is not enough to steam it in a pot.

Cornmeal Pudding

1. Prepare ingredients. Corn juice is cooked corn juice squeezed with a soymilk machine. There is no substitute for water. The amount of water should be reduced appropriately.

2. Sift the flour into the corn juice and add the yeast

3. Sift in the corn flour and mix well

4. Add an appropriate amount of sugar and stir evenly. According to the sweetness you like, you can add a little more sugar to promote fermentation.

5. Cover with plastic wrap and ferment for about 1 hour in a warm place

6. Stir the fermented batter evenly and let it rest for 15 minutes

7. Beat in an egg and mix well

8. Soak the red dates in water for about 10 minutes and wash them repeatedly

9. Spread the steamer cloth on the steamer, or use a mold to steam it. The shape is better. Choose this as you like. Pour in the fermented batter.

10. Put a layer of red dates on the top, and sprinkle a layer of red dates on the bottom if you like. Add an appropriate amount of water to the steamer, boil on a high heat, and steam on medium heat for about 40 minutes, depending on the thickness of the steamed cake.

Tips:

1. There is no freshly squeezed corn juice, it can be replaced with water, but the amount of water should be reduced appropriately.
2. The batter is thinner or the requirement for drying is not very strict, just keep it pourable;
3. The steaming time depends on the thickness of the steamed cake.
