Cotton Soft Chicken Cake
1.
The materials are ready. Note: 1. The egg container must be clean to ensure that it is free of oil and water; 2. The egg white and egg yolk must be separated clearly to ensure that there is no bit of egg yolk in the egg white;
2.
Put a tablespoon of white sugar and a little salt or vinegar in the egg white to get rid of it. Use an electric whisk (not recommended to beat by hand) until it is slightly white, then add a tablespoon of sugar
3.
Continue to beat until it is creamy, that is, the egg white will not fall off when the basin is upside down (this is very, very important, and determines whether the final cake will be served).
4.
Add 4 tablespoons of low-gluten flour, 4 tablespoons of white sugar, and appropriate amount of water to the egg yolk bowl, and stir evenly; then add the whipped egg whites in two parts, and stir until as shown in the picture. Note: After the egg white is added, it cannot be stirred in a circle. It must be stirred up and down (that is, toss back and forth) so as not to damage the finished egg white. This is very important, remember!
5.
Heat the rice cooker in advance and apply a layer of oil on the bottom of the pan, then pour the stirred cake paste into the pan, shake it twice to shake out the bubbles, then sprinkle with raisins, cover it, and cover the exhaust with a rag Hole, press the cooking button (Midea's rice cooker presses fine cooking), it will switch to the keep warm button in about 25 minutes, and then let it keep warm for 25-30 minutes to start the pot.
6.
The delicious cake is ready...
