Braised noodles with cowpea is my son's favorite. The first time I made it in a Taji pot, it was more delicious than cooked in a wok, and the noodles were more vigorous.

Cowpea Braised Noodles

1. Ignite the Taji pot, put the oil, and cook the green onion in the pot.

2. Add the cowpea, stir fry for a while with a pinch of salt, and put it on top. Pour less water. Don't overrun the cowpea in the water.

3. Cover the pot and simmer on low heat for about ten minutes (you can listen to it with your ears, until there is no water in it)

4. Open the lid to see if there is no water, pour in the light soy sauce, stir well with chopsticks and shovel. If you like to put vinegar and minced garlic, put it now.

5. Put it on the plate and you can eat it!

Tips:

Don't put too much water in the Taji pot braised noodles.
