Crispy Preserved Egg

Boil the quail eggs, remove the shells, and sprinkle an appropriate amount of salt to taste.

Pour vegetable oil into the pot and heat until 80% hot, then pour the quail eggs.

Turn off the heat and fry slowly, and fry the egg yolk crispy.

Adjust the sauce: prepare the green onion, chili oil, light soy sauce, fresh seasoning, oyster sauce, light soy sauce in a bowl. Put a proper amount of hot oil or stock in a juice bowl and mix well.
