Crispy Yellow Croaker
1.
Wash small yellow croaker
2.
Prepare the seasoning
3.
Pour the rice wine into the fish, mix well and marinate for half an hour
4.
Pour the oil in a hot pan, add 5 grams of cornstarch to the oil at 7 minutes (so that the oil will not be splashed and the skin will be intact)
5.
Put the yellow croaker into the pot and fry over medium heat
6.
Put the yellow croaker into the pan for frying
7.
While frying the yellow croaker, set up another pot, pour 200ml of water into the pot, then put the light soy sauce, dark soy sauce, spring onion, sauce, star anise, and rock sugar into the pot and boil for 5 minutes, then turn off the heat
8.
Fry until golden on both sides, pick up oil control
9.
Immediately dip the fish in the sauce and wait a minute before picking it up
10.
Put it into a bowl and sprinkle with chopped green onion
Tips:
1. Adjust the sauce to a bit saltier than usual. After boiling, you can try the taste and adjust it.
2. The fish is fried more thoroughly, and the taste is more crispy. If you want to eat tenderer, reduce the time of frying
