Crucian Fish Soup
1.
Prepare the ingredients (the crucian carp I chose has roe so I washed it separately)
2.
Heat the pan and put in the right amount of lard (lard is recommended, animal protein and lard are a good match, the fried crucian carp is very fragrant, and the broth is rich in milk)
3.
Add ginger slices and sauté
4.
Gently slide in the crucian carp, turn off the heat and fry until
5.
Fry it once and then turn it over and fry it
6.
Fry on both sides until slightly golden, add some boiling water (preferably add boiling water to retain the nutrients of animal protein to a greater extent)
7.
Bring it to medium heat again
8.
After boiling, turn off the heat and simmer
9.
Until the soup becomes rich and the fish aroma comes out (this process takes about half an hour)
10.
Put the washed vegetables into the soup lightly and bring to a boil
11.
Put it in a bowl and season with a little salt
12.
The milky white crucian carp soup is made at home. No milk is needed. The crucian carp is very fresh, just add some salt.
Tips:
Heart-warming reminder: You must buy fresh crucian carp, eat it and cook it now, the soup is delicious, it is best to use lard, I have not tried other oils, you can try if you like, I believe it is also good.
