Crystal Elbow

The elbows will be deboned for later use (you can't do it yourself, you can also let the meat sellers help you do it)

Flatten your elbows and rub some salt

Tie up the cut elbow with rope

Put it in the soup pot, add clean water, after the water is boiled, put the tied elbow in to blanch

Take ginger slices, star anise, cinnamon, pepper, cumin and bay leaves according to the amount and put them on the gauze to make a small brine bag
6.
Add the removed bones and a small brine bag into the pressure cooker, and cook for 20 minutes under high pressure
7.
Drain the high-pressure elbow and put it in the refrigerator for half a day
8.
Take out and slice ready to eat
