Crystal Potato Meatballs

First wash the yellow-skinned potatoes slightly to clean the surface silt, then peel off the skin, rinse again, and cut into thin slices with a knife, the thinner the better;

Spread the potato slices flat in a bowl, then put it in a hot water steamer and steam it on high heat for about 15 minutes, steam the potatoes thoroughly, just use chopsticks to easily puncture them

Season the steamed potatoes with a little salt, and then use a spoon or rolling pin to press them into a delicate mashed potato;

Pour potato starch into the mashed potatoes several times, then stir it into a flocculent shape, and then knead it into a soft dough that does not stick to your hands;

Grab a little dough, roll it into small balls the size of glutinous rice balls, and place them in a bowl, but be careful to leave some room for expansion to prevent the balls from sticking together.

Put the bowl in a hot water steamer again and steam for about 15 minutes. The potato balls will swell and turn white, and the starch will become crystal clear and cooked.

The ginger, garlic, and carrots are peeled and chopped, and the pork belly is chopped for later use;

Take out the steamed potato balls, start the pan again, pour in an appropriate amount of cooking oil, heat the oil, pour in the minced meat, and quickly stir-fry until the color changes;

Continue to pour minced ginger, minced garlic, and chopped carrots. After stirring evenly, pour in a bowl of water, add 1 tablespoon of light soy sauce, 1 tablespoon of oyster sauce, appropriate amount of salt, and a small amount of chicken powder. Bring to a boil over high heat;

After boiling, pour the right potato balls into the pot and simmer for about 3 minutes to taste;

Pour thin porridge evenly into the pot, cook until thick, sprinkle some chopped green onion or coriander, and then serve;
Tips:
1. Potato starch can also be replaced with corn starch and sweet potato starch; if kneading is too wet, continue to add starch, if it is too dry, add a little water;
2. Pay attention to the difference in the size and firepower of the balls, the steaming time is for reference only;
